Sheet-Pan Chicken with Lemon Vegetables
Chick POW chicken and Sweet Lemon vegetables share one sheet pan. Salt Free is an alternative seasoning for the whole tray.
Serves 4 • Prep: 15 minutes • Cook: 30–35 minutes
Ingredients
1 1/2 lb boneless skinless chicken thighs
2 tsp Chick POW
1 lb baby potatoes, quartered
2 cups broccoli florets
1 red bell pepper, cut into strips
1 tsp Sweet Lemon
3 tbsp olive oil, divided
1 tbsp lemon juice
How to make it
Heat oven to 425°F. Toss potatoes with 1 tbsp oil and half the Sweet Lemon. Roast on a large sheet pan for 15 minutes.
Coat chicken with 1 tbsp oil and Chick POW. Toss broccoli and pepper with remaining oil and Sweet Lemon.
Move potatoes to one side and add chicken and vegetables in a single layer, using a second pan if crowded. Roast another 20–25 minutes until the chicken reaches 165°F and potatoes are tender.
Squeeze lemon juice over the vegetables. Use clean utensils to serve.
Swap or combine flavors
For a Salt Free version, replace Chick POW with 2 tsp Salt Free on the chicken and replace Sweet Lemon with 1 tsp Salt Free on the vegetables.
Make it a meal
Serve as a complete meal, or add a plain green salad.
Shop the flavors
