Griddle Steak Tacos with Lime Slaw
Quick-seared beef and lime slaw with a choice of Cow POW, The Cajun Life or The Blackening.
Serves 4 (8 tacos) • Prep: 20 minutes • Cook: 12 minutes plus 3-minute rest
Ingredients
1 1/2 lb flank steak
2 tsp Cow POW
1 tbsp neutral oil
8 small tortillas
3 cups shredded cabbage
2 tbsp lime juice
2 tbsp plain yogurt
1/4 cup chopped cilantro
How to make it
Mix cabbage, lime juice, yogurt and cilantro. Chill while cooking the beef.
Pat steak dry, coat with oil and Cow POW. Heat a griddle or skillet over medium-high heat.
Cook steak about 5–6 minutes per side, depending on thickness, until it reaches at least 145°F. Rest at least 3 minutes, then slice thinly across the grain.
Warm tortillas in a dry skillet. Divide steak and slaw among the tortillas.
Swap or combine flavors
Replace Cow POW with 1 tsp The Cajun Life or 1 tsp The Blackening for a different spice profile. Start with the lower amount and adjust only after tasting cooked food.
Make it a meal
Pair with Grilled Corn with Seasoned Butter; choose its Wow POW option to keep the side less fiery.
Shop the flavors
The blends are finely ground: coat food lightly and evenly. Hold additional salt until you have tasted the cooked dish. Cooking times are estimates; use the doneness instructions.
